Spelt Tarte Tatin with Caramelised Pears and Cinnamon Labneh

Gavin Wren Baking, Recipes, Spelt & ancient grains

This spelt tarte tatin with caramelised pears, vanilla and cinnamon labneh is a pure taste of crispy, layered, puff pastry indulgence. Full of buttery richness and finished with a sweet cinnamon labneh, this is a dessert which I simply can’t get enough of. It’s also simple to make, there’s a tarte tatin in everybody that the Tatin sisters would be proud of, if only you’ll let it out! Lactose Schmactose. I fucked off my lactose intolerance last week with a massive dose of butter, entwined with sugar, flour and the heat of the oven to create this beautiful dessert. Occasionally I can’t handle the burden of my virtuous lifestyle (hah!) and have to stab myself in the foot, or perhaps stomach, and cause some pain with something that will give my digestive system a kicking. Harming myself, regardless of how small the act, is one of the things in life…

Rocket and Goat’s Cheese Pancakes with Pomegranate Dressing

Gavin Wren Dairy free baking, Main Dishes, Recipes, Vegetarian

Today’s post is full of childhood reminiscences of gorging on piles of syrup soaked pancakes, and how despite this gorging, we never ate savoury pancakes. I’m redressing that balance in my life by creating simple, flavourful pancake recipes such as these rocket and goat’s cheese pancakes, topped with a rich, powerful pomegranate molasses and olive oil dressing. Once these goat’s cheese pancakes are taken care of, you can start the main job; sweet pancakes! Best Day of the Year. In every calendar year, there exists a small handful of very special days, which most children hold with a spectacular cachet, or at least, I did. Christmas day was the highlight of the year with it’s magical myths of reindeer drinking the saucers of milk left in the garden, and father Christmas having hastily consumed the mince pie and brandy left for him on the garden table. Alongside the abundant presents…
Melanzane in Saor is an amazing vegetarian and vegan aubergine (eggplant) dish in a sweet and slightly sour sauce, which is unique to Venice and follows a proud history of Italian food using love, respect and time to get the best of the ingredients. It's a serious make ahead dish, needing 2 days to mature but worth the wait for those fantastic flavours and perfect for buffet spreads or picnics.

Melanzane in Saor (aubergine)

Today I’m recounting an amazing Italian dish called ‘melanzane in saor’, or aubergine ‘in Saor’. It’s a very simple yet beautifully balanced Italian dish that has sweet and sour flavours that work just beautifully together. The age is the important thing, you need to make this dish well in advance to let the flavours develop, it’s perfect to make a day ahead for a buffet spread or to take along to a picnic, but don’t hurry it. If there’s one thing that Italian cooking has ever taught me, it’s that love and respect are the ingredients that make food beauteous. Visiting Venice. Just over a year ago I visited Venice, one of the most confoundingly beautiful places I’ve ever been to. I expected hustle, bustle, noise and expensive food, which was entirely correct, however I hadn’t prepared myself for the heart and soul of Venice, which is the important part.…
Sweet cinnamon popcorn made on the stove in a saucepan is great fun as you watch all the kernels fly all over the place! Made with low sugar content and ready in minutes, you'll wonder why you ever bought pre-made popcorn!

Cinnamon Popcorn – Low Sugar

Gavin Wren Recipes, Small Bites

Today it’s one of my classic, sure-fire favourites. A little recipe I regularly make, always ensuring a bag of corn is residing in the cupboard, ready to launch itself into a steaming hot bowl of sweet cinnamon popcorn at the merest hint of a movie night. Besides, making popcorn at home is awesome fun and once you buy the bag of corn, you’ll always have the ingredients to make as much as you want. Oink, oink. I’ve been eating like a pig this weekend, which just has to happen occasionally, like a high-board dive into unabashed gluttony. They say the best diet is one which is varied, however I eat consistently healthy food in constrained portions all week. Therefore, including a hearty, gut-busting portion of ‘varied’* food occasionally at the weekends, enhances that sought-after variety and can only make my diet the pinnacle of healthy eating**. * i.e. pizza, curry,…
Sweety salty fresh lime soda

Sweety Salty Fresh Lime Soda

Gavin Wren Drinks, Recipes

‘Sweety salty’ is something that I first discovered on holiday in India about 5 years ago. We were picking up some snacks en route to the beach one day when I spied a packet of biscuits called Krack Snack. On the front of the packet were two perfectly jolly characters proclaiming “Sweety” and “Salty” and the snacks were described as ‘Sweet and Salt biscuits’. I thought this was a slightly random and peculiar taste combination, after all, biscuits are exclusively sweet or savoury, non? The idea of combining the two together seemed like saying a shop is open and closed simultaneously, or after last week’s post, like having mozzarella on a marinara pizza. A chance to experience such exotic gustatory experiences cannot be passed over, so I bought a pack. They lived up to their name, although I doubt the name ‘Krack Snack’ was decided upon because of their…
