The Best Spiced Apple and Pear Dairy Free Porridge

Gavin Wren Breakfast, Recipes

Today I’m writing about how to make the best dairy free porridge, topped with delicious spiced apples and pears and drizzled with a sweetener of your choice, or none at all, which makes this a no added sugar recipe. It’s the perfect bowl of hot wholesome goodness for your morning’s chow during this cold snap. Brrrrrrrrrrr. It’s cold. Really cold. Every morning I sit patiently in my car and watch the heating create a lozenge shaped vignette through the thick frost on the windscreen. Bernard patiently sits in the back seat, waiting for that moment when he can sprint across Wanstead Flats, unburdened by his leash and the noisy confinement of pavement walks. The temperature has been regularly below 0ºC and consistently around -4ºC when I get to the flats. Some will laugh at this, for instance I have relatives who live in Calgary, Canada, where it regularly hits -20ºC.…

Being Lactose Intolerant & Intolerant of Lactose Intolerance

Gavin Wren Food Education, Food Opinion Pieces, Writing

Can you keep a secret? I’m going to break some news, admit something I’ve been ruminating over for a long time. I’m going to hold my hand up and say that I don’t like milk, that I am probably lactose intolerant. This isn’t based on scientific numbers and doctors reports, it is based on personal evidence of an aversion to milk, so all those who hate the ‘fad of wellness’ better saddle up your best trolls and get ready for a fight. But First, Some Contradictions. I have always been slightly begrudging of ‘intolerances’. I’ve always seen a full-blown allergy based on doctors examinations and trials as a big, undeniable fact and no-one’s going to argue that point, hopefully. Except those who believe that exposure to things can reduce allergic reactions, but that’s another story altogether. But an intolerance? That’s more of a personal opinion type-thing and we all know…

Turmeric Sweet Potato Wonder Pots

The Wonder Spice Recently, turmeric took top position in the ingredient-of-the-moment hit list when it suddenly leapt to prominence due to the emergence of it’s overwhelming health giving abilities, which make it an all round super-spice. Before reading about this, I was primarily aware of it’s abilities to instantaneously stain anything it touched yellow, along with it’s presence in pilau rice and other Indian dishes I’d cooked. I once had a go at making turmeric milk and have to say I found the end result slightly underwhelming, in fact I wasn’t any where near being whelmed at all and I’m not even sure what being whelmed feels like, regardless of being under or over it. In fact it doesn’t even sound very pleasant, if someone said in conversation “I got whelmed last night”, I imagine my response would be “oh dear, are you ok?”. Anyway. As for turmeric the über-spice,…

It’s not even deepest winter, yet there’s a chill breeze whisking it’s way through our creaky, draughty old flat. Last night, the air outside was so crisp and clear that it felt like every noise I made was amplified and the background clattering of London was gently quietened for a change. Our quaint Victorian home has wonky floors, parallelogram shaped window frames and a staircase with uneven height stairs which makes first time visitors stumble when they head up to the loo. The central heating, although noble in intent, does daily battle with the ingress of cold, damp air, a fight which brings to mind the vulgar, but nonetheless highly illustrative phrase ‘like pissing into the wind’. I sometimes feel like I need to wear gloves at my desk, or even a onesie, because despite the high levels of ridiculousness that they embody, they’re supposedly very good at keeping you…
Dark chocolate coconut dairy free glaze

Dark chocolate coconut glaze – dairy free

Gavin Wren Baking, Dairy free baking, Recipes, Vegetarian

So you’ve got a cake you want a chocolate glaze for. Or maybe you’ve just made my banana coconut cake and want to upgrade it from amazing to stupendous? You need a rich, sumptuous glaze, something that’s going to both convey your sense of sophistication like dark chocolate and your laid back easy going nature like the tropical tones of coconut. Something that’s going to be so tasty that you could eat it by the bowlful, rather than putting it on the cake. Something that is going to make people go OMG, basically. In that case, you’ve come to the right place my friend. This is the one for you. When testing it, the first effort came out too runny. But, before I threw it out of the kitchen window in a petulant artistic rage, I thought I’d dip the spatula in and try some to check the flavours were…
